Easy One-Pan Shrimp & Veggie Delight

I do not like cooking on a busy day. But I am also trying to order takeout less because that leads to me eating something unhealthy. I have found easy meals to make to stay on track with my health goals but also making something I like. This was an idea I came up with trying to use the items I had left in my fridge. You can also add some tzatziki sauce to this recipe to give it more of a Mediterranean feel.

Seasoning for Shrimp
2 lbs. large shrimp raw
3 tbsps. fresh lemon juice
1 tsp. salt
1/2 tsp. of cayenne pepper
2 tsp. fresh ground black pepper
1 tbsp. Garlic & Herb Mrs. Dash
1 tsp. paprika
1/2 tsp. turmeric
1/2 tsp. cumin
2 fresh garlic cloves minced
2 tbsp. olive oil
1 tsp. of cayenne pepper

Veggies
1 small purple onion diced
1 large green squash halved and sliced
1 large yellow squash halved and sliced
1/2 red bell pepper cubed
1/2 green pepper cubed

Instructions
Marinate the shrimp with all the seasonings, lemon juice, and olive oil.
Meanwhile, chop and slice the veggies.
Add half a tablespoon of olive oil to a pan and bring to medium heat.
Saute the shrimp until they are fully cooked. Then remove from the pan. Set shrimp to the side.
Add veggies to the pan and saute until tender.
Mix cooked shrimp into the vegetable mixture to evenly coat with seasoning for about 1 -2 minutes.
Squeeze a bit more lemon.
Let cool for a couple of minutes then serve.
